trying to stick to a meal plan…day 1

Hi everyone!

So last Friday I decided to make myself a meal plan and see if I could stick to it for an entire week!!! I am usually one to buy a bunch of groceries and then make stuff according to what I have, but this week I actually made a grocery list based off of preplanned meals!

I want to see how closely I can stick to it..so that will be my challenge for the week! I will let you know each day how I do….and sort of see what meals I like/ don’t like and what meals keep me full and that sort of thing, so that I can make sure that each day I am really getting the most out of my meals and snacks!

So, grocery store list for the week looked like this:

Produce: apples, bananas, berries, broccoli, mushrooms, edamame, carrots, celery, cucumber, salad mix, mango, bok choy

Dairy: string cheese, feta cheese,  laughing cow wedges, vanilla almond milk, 0% plain greek yogurt, chocolate milk, precooked & peeled hard boiled eggs

Meat: lean ground beef, chicken breasts (i ended up getting these frozen strips that you just have to microwave to cook)

Snacks: sunbutter, banana chips, kale chips, trail mix, dark chocolate, roasted coconut chips

Extras: shredded coconut, sparkling water, sparkling limeade, couscous/quinoa mixture, 2 premade salads

I got everything on my list and created this wonderful stir-fry dinner on Friday night…

I prechopped all my veggies (mushrooms, edamame, celery, carrots, broccoli, boy choy) and marinated them in TJs soyaki sauce.

I then microwaved about 6 small pieces of chicken and then added some soy sauce on top.

Fianlly, I sauteed my veggies up and added the chicken at the very end..letting it all simmer for about 5 minutes. When it was done, I poured it all in a bowl and topped with some sesame seeds..super yummy, filling, and healthy! I will most likely be making this dish one night this week! Great way to clean out veggies at the end of the week as well!!

Friday night I headed out to a country western bar with my friend and we had tons of fun shooting pool, dancing, and even riding the mechanical bull!

Saturday morning started with some toast spread with sunbutter and topped with banana, then I headed out towards the marina in order to embark on my long run of the week! I was able to run 6 miles in 54 minutes, putting my pace at about a 9 min. mile, which I was super happy about!

Lunch was had with my momma while we were out running errands and we stopped at Souplantation in order to take advantage of the salad bar and huge soup selection!

My salad was topped with cucumber, peas, corn, radishes, cabbage, broccoli, tomato, raisins, sunflower seeds, onion, carrots, and some oil/vinegar combo…

Soup was a bowl of the fire roasted veggie and another bowl of chicken noodle..yum!

After lunch I went to a friends rugby game and then came home and lounged around for the rest of the evening!

My sister and I ended up getting huge frozen yogurts for dinner and it was quite satisfying to be a little unhealthy and have dessert for dinner!!!

Finally, Sunday I actually slept in! Which never happens!!! So, it felt awesome to be able to lie in bed and relax! I woke up and made myself some whipped banana oatmeal…then it was off to church and the grocery store with the familia!

Once we got home I did some meal prep..chopping up fruit and veggies for the week in order to make things easier on myself when cooking this week!

Then, it was off to LA where I was meeting some friends from UCLA for an early dinner!

It was so great catching up with them and we went to this super cute restaurant called Blue Plate where I got the worlds best salad!!!

It was arugula, goat cheese, butternut squash, roasted red peppers, and sunflower seeds..it was the perfect light salad full of delicious flavors!

For dessert we split the blueberry bread pudding and that was delicious as well! Dinner was awesome..great food, great people, and just a great way to spend my Sunday evening!

how i eat (primarily) unprocessed foods!

Hey everyone! Before I get into the meat of this post, let me tell you a bit about my evening yesterday and then my workout and breakfast today!

So, last night my family and I went to a HOCKEY GAME! Seriously, if you have never been to a hockey game, you need to go!!! They are so lively and action packed..never a dull moment! I tend to get bored when watching football and baseball, but with hockey the action literally never stops!!!

The game was awesome, Anaheim Ducks played the Dallas Stars and our ducks won 5-2!

Anyways, dinner was not the healthiest because it was game food haha but it sure was delicious! I had a hotdog w/ relish, mustard, and onions. Also, had a handful of peanuts, lots & lots of delicious popcorn (think movie theater style), a few Sour Patch Kids, and some hot chocolate…this is kind of ironic considering today I want to talk about how I cut out most unprocessed foods from my diet, but hey every once in a while you gotta give in and indulge a little 😉

Anyways, I was exhausted by the time we got home last night and fell asleep almost as soon as my head hit the pillow!! I thought about snoozing my alarm when it went off at 4:45 this morning, but decided to bite the bullet and get up for my morning workout! I didn’t know how in the mood I would be to run, but I decided to give it a go and actually had tons of energy! The run went by quickly and though when i post my workout it is going to look a tad confusing, in reality it is basically 5 min. incline walk followed by 10 minutes of 1 min. jog/1 min. sprint switch offs (repeat that 2x), then 5 min. recovery walk, 14 min. of increasing incline jogging, and 1 min. cool down..easy peasy!

So, ya like I said it looks confusing when written out, but it was an awesome workout and let me get in a lot of mileage in not too long of time!

I am trying to up my mileage in hopes of doing a 10K at some point this summer, so I think I am going to try an outdoor run by the ocean this weekend and hopefully get in over 5 miles!

Ok, next on the list is breakfast today..started with a banana and 1/2 a granola bar when I got home from the gym…then once at work I had…oats in a jar!!

Don’t you love how I captured my meal at different stages of being eaten! haha Anyways,  I did like 1/4 cup rolled oats, dash of vanilla coconut milk, 2 scoops plain greek yogurt, 1 spoonful cocoa, and then topped it this morning with more coconut milk, strawberries/blackberries/blueberries, & a scoop more peanut butter..yum!

Ok…now on to my topic of getting rid of processed foods in your diet. I actually happened to end up doing this by mistake and mainly just by keeping my diet made up mostly of fruits & veggies. Most of my meals center around some concoction of fruits or vegetables and then in the morning I add yogurt/oatmeal/whole grain toast/or nut butter to round out the meal.

Lunch and dinner tend to be more veggie based and usually are a salad or sauteed veggies topped with some type of protein. For lunch I like to add various mixtures of nuts/dried fruit/fresh fruit/chopped veggies/chicken/turkey/tuna/salmon/& a vinegar or oil based dressing.

Dinner tend to be a ton of veggies sauteed in coconut oil and then topped with cheese/& or meat..when i am eating rice or pasta I usually try to get a whole grain version (think whole grain pasta, quinoa, brown rice, etc.) and not too much sauce & salt added on top.

For me, once I started stalking up on fruits and veggies my meals came to center on those items and I stopped needing crackers/chips/croutons/lots of dressing/frozen meals/etc.

I also stick to plain greek yogurt/organic milk/rolled oats (not instant) and most of my breakfast options are pretty basic and fresh.

Once I started making my meals with less processed foods I found that my cravings for coffee and soda also decreased as well!

My diet now feels more rounded out and I am happy to say that the things I do eat fill me up and keep me focused/energized/& strong!

Of course like I said earlier I do indulge every once in a while in snack type foods, but even then I have found that the less I have them the better they taste when I do have them here and there!

things i am loving right now!

Good morning slash afternoon everybody! First let me start off with a quick recap of my workout and dinner last night, which was super delish!

Workout went well! I pushed my self a little harder on my planned run where instead of running for 4 minute intervals I made those 6 minute intevals and then broke up the next 4 min. incline walk into 2 min. hard incline and then 2 min. recovery incline!

My final run breakdown looked like this…

When I got home I packed my breakfast/lunch/snacks for today and then got to work on an easy dinner!

Since I am trying to use up groceries/leftovers before they go bad I recycled my quinoa caprese meal idea, but added in a chicken sausage for some added protein & staying power! The added meat component gave the dish a lot more sustenance and I thoroughly enjoyed it…

Again all you do for this dish is take about 1/2 c. cooked quinoa (mine was leftover from din on Sunday), cut up a handful of grape tomatoes, some basil, & mozzarella cheese, then I cooked the sausage on the stovetop in 1 tbsp. coconut oil and added everything together in a bowl!

Super quick, easy, fresh, and delicious meal!

For “dessert” I had an orange..I am not usually one for having fruit for dessert, but we didn’t have anything sweet in our house really..so an orange had to make do 😦

Anyways, after dinner my family watched the Duck’s hockey game against the San Jose Sharks, we are big Ducks fans haha and well they got their butts kicked to the Sharks and it was a sad night for all in the Kennedy clan 😦

PS my fam is super big on hockey so we watch it all the time! I am pretty much up on all the stats and it is one of the only professional sports I watch on the reg! It’s just so good…fast paced….fights…cute hockey players…what’s not to like!

Next up…breakfast this morning! I finished my jar of cookie butter yesterday, and that only meant one things…overnight oats in a jar!!!

I added 1/2 c. rolled oats, 1 6 oz. container of Trader Joe’s Honey Greek Yogurt, 1/2 tsp. chia seeds, dash of vanilla almond milk, cinnamon, and apple slices…in the morning I mixed it up and added a bit more milk/a dash of sunbutter and was thoroughly happy with my little concoction and the return of this breakfast beauty!

Ok, now on to things that are making me happy right now…let’s do it list style because that makes thing super easy to read 🙂

  1. Daylight Savings Time- I mean nothing is better than getting off work, going to the gym, and still having a tad bit of daylight left once my whole day is over! Seriously..makes me so happy!
  2. Spring Weather- There is something about Spring time that is just so wonderful! Right now it is starting to warm up, baseball season has begun, the smell of fresh grass and blooming flowers delights your nostrils, afternoon walks get more appealing by the day…it’s the down right best time of year!
  3. Easter!!!- I LOVE EASTER! There is something about wearing a nice sundress, going to mass with my family, eating a yummy brunch, and enjoying season candy like Peeps and Jelly Beans that is absolutely wonderful!
  4. 30 Rock- My obsession with this show is getting a little out of hand! I didn’t watch it really when it was on air, but recently discovered it on netflix and decided to give it a whirl! Wow is all I can say…it’s so freaking hilarious! It’s kind of a very particular type of humor, but it makes me crack up every time I watch it..gotta love Tina Fey!
  5. Interval Workouts- My latest obsession has been doing intervals on the treadmill…they have been the best way for me to increase my running mileage and I seriously sweat like no other when I finish them! Also, adding an inclined walk in my intervals seriously has given me great endurance…on my hike this weekend I barely struggled at all on all the major hill climbs! I was super proud of myself 🙂
  6. Jillian Michaels 6 Week 6Pack Abs- I am going to really push myself to do it for 6 weeks and see if I notice a difference! It kicked my butt Sunday, so hopefully with consistency and repetition I will see some results…because let me be honest, I’d love to have a more toned stomach once summer time bathing suit season roles around!
  7. Last, but not least…my new camelback waterbottle! It seriously keeps me sippin’ water ALL DAY LONG! Without it I never wanted to drink water, but now I refill it multiple times a day and keep it with me pretty much at all times! Yay for getting my h20 in on the reg…I gotta say it makes me pee a lot, but I have noticed clearer skin and less frequent headaches..gotta be good signs right 😉

spring has sprung! weekend recap!

Hi everyone!

Wow Friday got crazy busy and before I knew it the weekend had already come! Let me start with a quick recap of Friday and then I can move on to the rest of the weekend, which was filled with some super fun outdoorsy time!

First of, Friday lunch…

Later that evening I was on mom duty since my parents went to a hockey game and left me in charge of the sibs! Little brother had a football game, so after work I hit up Trader Joes and then immediately took him to his game…

It was freeeeezing outside! But luckily my sister and I packed some snacks (grapes & cinnamon toast crunch/life cereal combo), so the game didn’t seem to take too long! Unfortunately his team lost, and he was mad when my sister and I asked who had won..apparently “we weren’t paying close enough attention” to be able to tell..whoops!

When we got back home it was kind of late and my original plan to make everyone salmon burgers was kind of not as appealing. We all kind of wanted something sweet, so I whipped up some smoothies (banana/blueberries/mango/pineapple/spinach/almond milk/plain yogurt) and topped them with some fresh strawberries/coconut/dry cereal/& granola.

Saturday morning my sister and I had planned to take a hike in nearby Laguna Beach, so we got up early and were out the door by 8:30 am! We stopped on the way to get the best scone ever…chocolate orange deliciousness!!! And some coffee for her and veggie juice for me!

We got to Laguna and started our hike by 9:30..check out these gorgeous views…

Anyways, the hike was awesome and challenging enough to get us sweating! The weather was perfect…clear, slight breeze, sunny! Everything was going perfectly…until….WE GOT LOST!

So to make a long story short we took this long way back around to what we thought would be where we started, but when we got to the end we were at a completely different parking lot! I started freaking out obviously…especially because you had to pay hourly for parking and we had only 30 minutes to make it back to our car! Not nearly enough time to go back the way we had come! Anyways, after some tears were shed and some mean words were exchanged (whoops, we were kinda freaking out! aka I was!), we finally managed to find our car..thank the Lord!

In the end we ended up laughing about the whole thing, but let’s just say that was a hike we will not be forgetting!

Lunch that day was with a friend who was in town for her spring break and we went out for Mexican food! I got a shrimp taco and a side salad, and also munched on some chips and salsa…it was SO YUMMY! I had almost forgotten about my deep love of all Mexican food!

Then, dinner Sunday night was the salmon burgers I had planned to make the night before, but they weren’t all that good (kinda spongey), so I cooked myself up some kale and had some multigrain bread w/ orange marmalade and a baked sweet potato on the side.

Alright, now on to Sunday!!! Sunday started with a nice breakfast consisting of some homemade banana bread, courtesy of my sis and a yogurt parfait topped with mango and banana!

Then, I did a 25 minute yoga dvd and also Level 1 of Jillian Michael’s 6 week abs, which was killer!!! I was sweating like no other after that…and am going to try and do it at least a couple more times this week, because I loved it!

Next, I hit up the local farmer’s market with my sis and got some fresh cara cara oranges, some cherry/apple/pomegranate juice, and some tulips!

We got lunch at Panera (turkey sandwich & garden salad) and then went to Ulta to pick up some essentials (lotion/eye makeup remover/cotton pads).

Dinner was teriyaki salmon, quinoa, and a salad I made that had dried cherries, pistachios, sharp white cheddar pieces, and green apple w/ a homemade vinaigrette!

FINALLY, breakfast this morning was another cereal bowl!

Staying On Track the Healthy Way

Hey everybody! So, today has been a good day so far and I wanted to write a little about my journey trying to regain my identity during my recovery from my eating disorder. But first let me fill you in on my workout/dinner/& breakfast!

Workout last night went better than expected! I was feeling kind of crumby as I posted yesterday, but then I had a bagel think & cream cheese, lots of water, and got ready for a hard workout! When I got to the gym I was able to do my 50 min. workout, even going harder than I had planned at some points! I also did my ab routine and saved the squats for today because I was getting tired at that point. I typically get bored at the gym after like an hour, but can make myself stay for like an hour and fifteen or twenty minutes but that’s tops!

After the gym I showered and then prepared myself a super yummy quinoa caprese bowl! I basically took some leftover cooked quinoa and added in fresh mozzarella, tomatoes, basil, and balsamic, mixing everything together for a super yummy dish!

I also snacked on some dark chocolate covered power berries from Trader Joes and some peanut butter/berries while preparing my lunch for today!

Breakfast this morning was a Special K Yogurt Parfait…

Which was a contained of Trader Joe’s Mango flavored greek yogurt, topped with a scoop of Fage 0% Plain greek yogurt, blueberries, raspberries, blackberries, and some Vanilla Almond Special K cereal for some crunch! I have been trying to branch out and try some different breakfast options, because for the past few weeks I have been all about overnight oats!! haha anyways tomorrow I am thinking of trying out a bagel or oatmeal, so we will see if I can come up with a new fave breakfast option! If anyone has suggestions that are portable or easy to make using just a microwave and/or a toaster oven..let me know!!

Snack this morning was a banana, chocolate chip chewy bar, and vitamin water zero…just in case you were curious as to what my snacks are at work haha

Ok, now to the meat of this post…identity and how to be yourself in a world so full of judgment!

For me, during my years with an eating disorder I became a weird and different version of myself. Since I was consistently isolating myself, lying, and hiding away, I lost all sense of the person I was and the person I wanted to be. I let go of all of my morals and everything that was important to me. I was lying to my friends and family, so therefore they learned to not trust me and eventually even they did not care to be around me. I was hurting myself and then lying to make it seem like things were better than they really were. In all honesty I have never been more fragile, afraid, lonely, and confused as I was during those years.

However, as I have progressed in my recovery I have become more comfortable with the person that I am! I feel like I now know more about my positive and negative character traits and have tried to work on my negative ones to make myself a better person all around. I know I can be impatient, judgmental, a control freak, and sometimes insecure, but the more I try to stay aware of those characteristics, the more likely I am to catch myself when I start to display them.

I now try to be myself and have learnt that if others don’t like who I am, then tough luck for them! I am now more selective about who I am friends with because I have realized that there are only a few people who will really be there for me when the goings get tough! And I would way rather surround myself with people who make me feel good about myself, rather than have tons of people who don’t give a crap about me!

I have come to see that I want to be a person who lives a healthy life and is responsible and fun to be around. I try to help out others as much as I can and do kind things for no reason or without being asked. I try to keep a positive outlook on life and realize that no matter what happens there is always another day and another way to make things better!

If anyone is struggling with finding their identity or want to better themselves I would suggest making a list of qualities you admire in other people and then using that as a guide for yourself. But also remember that you are who you are and sometimes you have to find ways to make your personality work for you. Never be afraid to be who you are because the people who don’t like you are better off not in your life anyways!!

In conclusion, take a second to think about this quote…it really helps me in times when I am feeling down…

weekend recap!

Hey Everyone! Hope you all had great weekends and St.Patty’s days!! I know my weekend was definitely packed…I went beach camping, shopping, got my nails done, cooked, did laundry, went to the store, went out with friends, got brunch with the fam, hit the gym, napped…seriously it was hectic! haha but definitely so much fun and being at work now is super hard after such a fun few days!

So, lets start with Friday night..I went to Trader Joes after work and got groceries for the week…even putting together a grocery list based on some meals that I planned for the week! I will share some of those ideas with you in a bit! Once I stalked up at the store, I came home and prepared a super healthy and delicious dinner for my 2 sisters and I…

So, basically I got everything out and ready to go before I started cooking… which was

2 boneless wild caught salmon filets

1/2 cup mango salsa

3 tsp. brown sugar

3 tbsp. rice vinegar

3 tbsp. olive oil

1 avocado diced

1 lemon

3 cups kale

1 tbsp. minced ginger

2 cups chicken broth

1 cup quinoa

To prepare the salmon I put the filets into a large ziplock bag and added the salsa, brown sugar, vinegar, and olive oil..I let it sit for about 15 minutes while I let the oven heat up at 350 degrees. I then filled a tray half way with water and put that on the bottom rack and then put the salmon on the top rack where it cooked for 20 minutes. The tray of water helped to keep the salmon super moist!

To prepare the quinoa I let the chicken broth and quinoa come to a boil and then turned the hit down and let it simmer until all of the liquid had absorbed..about 20 minutes in all.

Finally, when the salmon had 5 minutes left I sautéed the kale in 1 tbsp. coconut oil, squeezing half the lemon on top and adding the garlic as well.

Then, I simply spooned everything out and topped with the avocado, making 3 dinner sized portions and 1 lunch sized portion left over!

Dessert was popcorn and easter candy (aka peeps, robins eggs, etc.), which my sisters and I enjoyed while watching the movie Pitch Perfect! That movie is absolutely hilarious and Fat Amy seriously cracks me up the entire time!! Perfect sister bonding night if you ask me!

Saturday I woke up and had a banana and a luna bar while I got ready to go beach camping! My friend picked me up and we drove down PCH to Dana Point where we spent the day enjoying the nice weather, beach views, and eating delicious food like french toast, eggs, potatoes, pita chips, hummus, carrots, skittles, caprese, chicken sausage links, angus beef burgers, trail mix, rolos, and most importantly s’moores!!!

As you can see in this pic we took some s’moores risk topping double stuffed oreos with marshmallows, and adding rolos to others, for an untraditional mix on this classic camping food! Lets just say I was stuffed and tired after this awesome day in the sun!

Then, Sunday was obviously St. Patty’s day and my family went to church and then had brunch at a seaside restaurant close to home.

It’s times like this that I realize how lucky I am to live so close to the beach!! I enjoyed an eggbeater omelet with avocado, tomato, and mushrooms, with a side of orange toast (super thick and delicious slightly orange flavored toast, topped with butter and orange marmalade…aka one of the best things I have ever eaten!)

After hitting up the gym and getting my nails done with my sister I took a nap and woke up to enjoy some carrots/cheese/& bread before dinner which was corned beef and cabbage! A truly Irish meal for sure!

This weekend was super fun and filled with so many good times! Though I still feel stuffed today I am trying to get back on track with my eating, enjoying a yogurt parfait for breakfast this morning…
