how i eat (primarily) unprocessed foods!

Hey everyone! Before I get into the meat of this post, let me tell you a bit about my evening yesterday and then my workout and breakfast today!

So, last night my family and I went to a HOCKEY GAME! Seriously, if you have never been to a hockey game, you need to go!!! They are so lively and action packed..never a dull moment! I tend to get bored when watching football and baseball, but with hockey the action literally never stops!!!

Anways, here is a pic of my sister and I making “duck faces”, while en route to the ducks game!

hockey game pic

The game was awesome, Anaheim Ducks played the Dallas Stars and our ducks won 5-2!

Anyways, dinner was not the healthiest because it was game food haha but it sure was delicious! I had a hotdog w/ relish, mustard, and onions. Also, had a handful of peanuts, lots & lots of delicious popcorn (think movie theater style), a few Sour Patch Kids, and some hot chocolate…this is kind of ironic considering today I want to talk about how I cut out most unprocessed foods from my diet, but hey every once in a while you gotta give in and indulge a little 😉

Anyways, I was exhausted by the time we got home last night and fell asleep almost as soon as my head hit the pillow!! I thought about snoozing my alarm when it went off at 4:45 this morning, but decided to bite the bullet and get up for my morning workout! I didn’t know how in the mood I would be to run, but I decided to give it a go and actually had tons of energy! The run went by quickly and though when i post my workout it is going to look a tad confusing, in reality it is basically 5 min. incline walk followed by 10 minutes of 1 min. jog/1 min. sprint switch offs (repeat that 2x), then 5 min. recovery walk, 14 min. of increasing incline jogging, and 1 min. cool down..easy peasy!

SPRINTS N HILLS TRADMILL WORKOUT

thursday workout

So, ya like I said it looks confusing when written out, but it was an awesome workout and let me get in a lot of mileage in not too long of time!

I am trying to up my mileage in hopes of doing a 10K at some point this summer, so I think I am going to try an outdoor run by the ocean this weekend and hopefully get in over 5 miles!

Ok, next on the list is breakfast today..started with a banana and 1/2 a granola bar when I got home from the gym…then once at work I had…oats in a jar!!

thursday breakfast 1

thursday breakfast 3

thursday breakfast 2

Don’t you love how I captured my meal at different stages of being eaten! haha Anyways,  I did like 1/4 cup rolled oats, dash of vanilla coconut milk, 2 scoops plain greek yogurt, 1 spoonful cocoa, and then topped it this morning with more coconut milk, strawberries/blackberries/blueberries, & a scoop more peanut butter..yum!

Ok…now on to my topic of getting rid of processed foods in your diet. I actually happened to end up doing this by mistake and mainly just by keeping my diet made up mostly of fruits & veggies. Most of my meals center around some concoction of fruits or vegetables and then in the morning I add yogurt/oatmeal/whole grain toast/or nut butter to round out the meal.

Lunch and dinner tend to be more veggie based and usually are a salad or sauteed veggies topped with some type of protein. For lunch I like to add various mixtures of nuts/dried fruit/fresh fruit/chopped veggies/chicken/turkey/tuna/salmon/& a vinegar or oil based dressing.

Dinner tend to be a ton of veggies sauteed in coconut oil and then topped with cheese/& or meat..when i am eating rice or pasta I usually try to get a whole grain version (think whole grain pasta, quinoa, brown rice, etc.) and not too much sauce & salt added on top.

For me, once I started stalking up on fruits and veggies my meals came to center on those items and I stopped needing crackers/chips/croutons/lots of dressing/frozen meals/etc.

I also stick to plain greek yogurt/organic milk/rolled oats (not instant) and most of my breakfast options are pretty basic and fresh.

Once I started making my meals with less processed foods I found that my cravings for coffee and soda also decreased as well!

My diet now feels more rounded out and I am happy to say that the things I do eat fill me up and keep me focused/energized/& strong!

Of course like I said earlier I do indulge every once in a while in snack type foods, but even then I have found that the less I have them the better they taste when I do have them here and there!

Hopefully this helps with anyone trying to get more healthy meals in and let me know if you have any questions!

What type of unprocessed meals are your favorite?

Any type of fish with a nice roasted or sautéed veggie side!

Any snack foods that you could NEVER give up, despite how crappy them may be for you!?

Peanut M&Ms, Cheese-Its, & Microwave Popcorn are my guilty pleasures fo’ sho!

vacation recap..plus how to stay healthy when on vacation!

scenery 1

Easter weekend meant my family was road tripping it up the California coast! Our destination was a little above Santa Barbara, we planned on looking at some colleges for my seester and then visiting my aunt/uncle/& cousins on Easter Sunday!

Friday morning started out with an early morning spin sesh before we hit the road!

friday spin

It felt good to get a nice workout in and then my family ended up hitting the road at about 11. The views up were soooo pretty and traffic wasn’t too shabby either!

Let me preface our vacay by telling you that we ended up eating lots of McDonald’s this weekend! The trip up we stopped to use the bathroom, but then everyone ended up eating! Most of the fam got fish sandwiches, but i opted for a yogurt parfait and some french fries…the same meal I had on our trip home on Monday! haha My dad and brother also stopped again on the way home to get shakes…so we had a total of 3 McDonalds stops in 4 days..keepin’ it classy folks!

mcflurry

Anyways, on Saturday we headed to Morro Bay, which is about 15 minutes north of San Luis Obispo…it was a gorgeous days and the views were amazing!

While in Morro Bay we decided to get lunch at a nice restaurant called Dorns..the views from our booth were awesome and I enjoyed a delicious bowl of corn chowder and some warm sourdough bread! Here is a pic of the aftermath of our meal…

Our family of 6 can do some serious damage at meals!

Then, we continued to drive up the coast towards San Simeon and turned around a little past Heart Castle…nice long drives our my favorite! So relaxing!!!

school house

All the scenery was lush and green because of spring..and we were blown away by how nice the weather was as well!

We also looked at the campus of Cal Poly SLO and my siblings and I managed to take some super serious pics while waiting for mom and dad to pay for parking…

vic, will, and me

vic and me 2

vic and me

Aren’t we just the cutest things! haha Anyways, my sister is a senior so we wanted her to look at both Cal Poly SLO and UC Santa Barbara, because she got into both schools and is trying to make a decision! I got the feeling she liked SLO better because it is a smaller school and she doesn’t want to be overwhelmed at a huge college, but we will see!

Anyways, next day was Sunday and my family went to Easter mass at the San Luis Obispo Mission, which was so nice! Then, we had a nice Easter brunch at a restaurant that sits over the creek right next to the Mission!

funny easter

Mediterranean appetizer platter w/ olives, hummus, pitas, etc.

easter lunch

I got a “taco salad”, which has a grilled white fish served over white rice and fresh kimchi…it was so fresh and delicious! The perfect meal for sure…lots of flavor and one of the best things I have eaten, hands down!

easter drinks

Ice tea, mimosas, water…our drink selections!

Then, we walked around downtown SLO and got ourselves some ice cream for dessert..I got cookie dough and it was delicious!!

easter ice cream

That night we headed to my aunt and uncle’s house for a nice Easter dinner.

cath and vic

We had ham, fruit salad, regular salad, cheese/crackers, and the best cheesy potato casserole I have ever eaten in my life!!!!

Dessert was strawberry shortcake, which really hit the spot as well!

strawberry shortcake

We spent the night catching up with family and my parents told some of the funniest stories of when they were younger! Such a great family Easter for sure!

The next day we were heading home, so we packed up and headed to Santa Barbara to take a look at that campus!

cath and i mirror shot

Anyways, we finally made it home Monday evening and I was exhausted so i watched some hockey, hit the grocery store, had dinner, and hit the sack!

Family vacations are seriously the best!!! And this one was no exception!

While on vacation I made use of the hotel gym 2 mornings (Saturday & Monday..doing only 40 min. of cardio, but still worth it!) I usually try to get in a quick workout early in the morning when we are vacation, that way I don’t feel as bad when I indulge in the treats that usually accompany being on vacation!

Also, for breakfast we would usually hit up the free breakfast at the hotel and though I was tempted to indulge in things like french toast, pancakes, muffins, bacon, and hash browns..I tried to stick to oatmeal w/ pb, toast & eggs, yogurt w/granola, and always a side of fruit & and a banana! My trick for hotel breakfasts is to eat something that will fill me up, but not weigh me down! Oatmeal is always a great option and I also love that eggs are already cooked and easy to grab as well! Try to eat something substantial, but don’t go overboard just because it is buffet style!

Alright on to my eats and workouts yesterday and today…

Green juice yesterday morning…

tuesday breakfast

yogurt/fruit/granola parfait

tuesday lunch

lemon chicken/arugula/quinoa/couscous salad via Trader Joes

tuesday dinner

Soyaki marinated salmon w/ green beans and zucchini (parents had the bbq on already, so I threw on my own salmon filet and the zucchini!)

Workout yesterday was an hour long spin class and some stretching after!

Workout today was 50 minutes of spin (instructor didn’t show up, so I did my own workout and managed to sweat a lot!!!) followed by 15 minutes of abs on the stability ball…

Breakfast isn’t pictured, but was cottage cheese & fruit parfait, banana, Starbucks misto, and some grapes….

I will be back later with lunch and my fun plans for this evening! Keep it classy my friends 🙂

funny me

I know I sure do 😉

my problems drinking water…

ok let me get this minor rant out…

water bottle

So, I have been trying to drink more agua lately because I hear it’s good for you and I know I don’t drink enough and ya…so I go out and buy myself a nice water bottle and have been hitting that thing like nobody’s business! I’m slurpin’ all day long, but then…problems occur!

I have to pee like every 10 minutes! It’s insane! I don’t know if I have some type of small blatter or something, but it’s getting ridiculous! Maybe it’s a mind thing now haha but I need advice…how do all you water drinkers manage not to spend the whole day peeing?! Or do you just adjust to have to use the restroom frequently? Fill me in because I am in such a dilemma…to drink and pee or not to drink and to be dehydrated?! What’s a girl to do! haha

Anyways, on to lunch today…to start I had an unpictured salad (I ate that thing in like 2 minutes flat), it was leftover from the other night at dinner and had apple, dried cherries, sharp white cheddar cheese, and pistachio meat..I topped it with a squeeze of lemon as my dressing.

Then, I also had a sandwich with a spread of Brie Cheese (comes in prepackaged wedges courtesy of Trader Joes), cut up apple slices, cinnamon, and honey..it was super yummy and kept me full all afternoon!

tuesday lunch

Now, on to my workout…..SPIN CLASS! I am going with my sis..a little nervous because it kicks my butt! But should be a good workout and nice to switch it up!

I will see you all tomorrow, have a nice evening everyone 🙂

5 things you didn’t know about me…

Before I get to the good stuff…aka 5 odd/quirky yet lovable things about me haha I will share lunch and my workout plan for this evening!!!

Ok, so after breakfast I had a handful of chocolate covered raisins- courtesy of my office kitchen and also a bag of Angie’s Classic Sweet & Salty Popcorn (tastes like kettle corn, but is made with all natural ingredients like popcorn/sunflower oil/ evaporated cane juice/& sea salt..yum!).

Then for lunch I had a salad with butter lettuce/dried cherries/brie cheese/pistachio meat (the inside sans shell)/& Annie’s Raspberry Vinaigrette dressing….

monday lunch salad

On the side I also had a piece of multigrain french bread with orange marmalade spread on top!

monday lunch bread

Yum, nothing better than a piece of fresh bread!! And, orange marmalade is my ultimate favorite jam, so that was an added bonus!

On to my workout plan that I made..I will be doing a run similar to last Monday, which was where I do a 4 min. incline walk, 4 min. jog/run, 2 min. hard incline walk, and then repeat this with added intensity! This treadmill workout is definitely one of my favorites, as it incorporates enough recovery time to be doable and also mixes things up so I never get bored while I do it!

Then, I plan on doing some arms & abs to round out my workout, so we will see how this goes!

PicMonkey Collage

Ok, now on to 5 things about me time! Woo!

  1. I am kind of a low key nerd in that I love school, was valedictorian in high school, and went to UCLA for my undergrad
  2. I have known that I wanted to be a lawyer since I was in 8th grade and have never changed my mind, despite people telling me how hard law school is/ how boring being a lawyer can be haha apparently i am just a boring nerd who is looking forward to law school..what can i do?!
  3. I am the oldest of 4 kids and have a bizarrely close knit family! Ask anyone who knows me and they will tell you how much we all support each other, make each other laugh, and are there for each other! We also are hugely sarcastic and so most of the time we are just making jokes that only we think are funny haha it’s weird, but whatever..i love my fam!
  4. I make BOMB cd’s/playlists! In high school I was always designated to make people cd’s like monthly and I loved it! Some of my friends even tell me that they still listen to mixes I made like over 4 years ago! haha I just have a gift of picking the right placement of songs, so that the playlist always seems to have variety and a nice flow from song to song…I seriously shoulda been a DJ! Screw law school, new life plan! haha just kidding, if only I could support myself on a DJ salary I’d probably be in!
  5. I can’t sleep in! It’s like I am kind of a grandma…I like to be in bed by 10 and I can wake up easily at the crack of dawn! Morning workouts are no prob for me because I honestly don’t mind getting up at 5 am! There is something about the calmness early in the morning that I just love and though sleeping in is nice on the weekends and every once of a while, I am definitely an early bird!

Ok everyone! Hopefully you now know a little more about me! If you have any more questions or anything you want to know about me just leave a comment and I will answer your questions!

Hope you all enjoy your evenings and I will see you tomorrow! Adios mis amigos 🙂

my 4 essentials to a healthy life.

581772_489812181055585_1608806098_n_large

I seriously think these are the keys to maintaining a healthy lifestyle! I am on this new kick where I try to drink 8 full glasses of water a day! Do I have to pee a lot…yes! Is it worth it…yes!! I feel more energize, skin seems to be more clear, and helps me stay fuller longer..making me think that a lot of times I was confusing thirst for hunger!

Working out also gives me tons of energy! Working out and being active helps wake me up and allows me to set goals for myself and work hard to achieve them. It helps keep me positive and allows me to get out any pent up anger or aggression as well.

Healthy eating varies person to person…I think it is key to include a variety of different foods in your diet, including as much fresh and unprocessed foods as you can! What helps me is eating lots of fruits, veggies, grains, lean meats, healthy fats, and also allowing myself indulgences like chocolate and ice cream, but within moderation.

Last, sleeping well is key to performing your best. Without adequate sleep I feel groggy and off. Sleep allows us to recharge and maintain focused the following day, so make sure to get your zzz’s!

Alright, on to my lunch today…

week 3 tuesday lunch

Smoked salmon/spinach/& cream cheese on an everything bagelwich.

week 3 tuesday lunch side

Snap peas on the side for a little extra something to keep me full! Fruits and veggies are my go to sides because they sit heavy in my stomach and make my fullness last longer!

On to my workout plan for this evening, which is…

march 19 workout plan

Well, I am off to make myself an afternoon snack..large apple/ large spoonfull of nut butter..check and check! Talk to you all tomorrow 🙂
