muffins, pizza. & cupcakes…oh my!

Greetings earthlings!

Yes I am a weirdo…and yes it has been a day full of goodies…hence the following selfie!

I have been trying not to go hog wild with the sweets and junk food today…but yikes..it is super hard to avoid office goodies and I am not going to lie..I have definitely been picking at scones & muffins all day, and now a little frosting from a cupcake! Sheesh…eating healthy would be a lot easier without temptations being through at ya from everywhere! But it has been nice to snack on some things that I don’t typically have! Hey, I try not to restrict myself when I really am craving something. Which means that all day long I have trying sit it out, and if my craving is still there 30 minutes later then i typically let myself have a small piece of whatever it is I want!

Today, is also my little sister’s b-day!!!

Homegirl is 15 years old and I seriously can’t believe it! It seems like only yesterday she was running around in her diaper singing “Bye Bye Birdie” songs into a hairbrush! Wait a minute, that was only yesterday…haha just kidding! Lame joke, but whatevs! I am so blessed to have her as a sister and she has seriously been through so much in her 15 years! She was in and out of the hospital a few years back, ended up having Ulcerative Colitis and thus surgery where she had her entire large intestine removed!!! She is such a little trooper though and her perseverance through all of the hard times is what gives me strength each and every day!

We will be going out to a family dinner later tonight and I am going to take her shopping Sunday, so she is getting in plenty of celebrating time!

Anyways, now on to some of my recent life happenings…lunch yesterday looked something like this…

A salad full of veggies! It had cucumber, carrots, tomatoes, celery, feta cheese, mixed greens, dried cherries, and some of my couscous salad that I also had last week!

Then, I went out to a little street fair dealio last night with some friends and we enjoyed some tacos & cheese fries, followed by a froyo run on my way home! The street fair was super cute and right by the beach…there were live bands, fresh fruits/veggies for sale, and tons of cute jewelry/candles/clothes/shoes/etc. that you could buy too! Super fun and I will for sure be going back a lot this summer!

My day today started with a nice gym sesh where I logged 5 miles in 56 minutes! Lots and lots of hill climbs and running on an incline, which was tough!!! I was sweating up a storm by the end!! I also did about 20 minutes of arms to round out my workout! Then, I grabbed a green juice on my way to work…

Also, picked up the scones and muffins to bring in for everyone at the office…and then enjoyed a small piece of scone before devouring some yummy oatmeal topped w/ candied walnuts & blackberries…

w/ a large spoonfull of sunbutter…and then for lunch I made myself a huge plate of salad and opted out on the pizza! I would have indulged, but I know tonight will be a big dinner with the family, so I didn’t want to have a huge/heavy lunch!

Finally, I also got some nice flowers today because apparently it is administrative appreciation day…who knew?! Anywhoooooo, one of my fellow coworkers brought in beautiful lavender plants and it really is brightening up my desk! I may have to make sure to always keep something green in the office, because it definitely adds some spice to my boring desk!

5. THIS HOUSE IS MY DREAM HOUSE!!! Gah, the white exterior, stone walkway, wrap around porch, lots of windows..I could do on and on..basically I am in love and now have plans to one day (when I am a billionaire) to build myself an exact replica!

i have the BEST MOM ever!

Do you ever have those days where you realized how truly blessed you are?! Today was definitely one of those days for me because I shared some quality time with my madre!

My mom has always been a superb mom…from the time I was little I have always loved spending time with her and our one-on-one time (though rare) is seriously always the best! We have a pretty open relationship, especially after going through all my issues these past few years and so our convos are generally open, honest, and heartfelt.

We also love to joke around, so we always are laughing when we are together! And today was no exception!

Momma had the week off because she is a teacher and the school is on spring break, hence my entire family got to sleep in, go on bike rides, eat yummy food, watch crap tv, lay out, and RELAX while I was stuck slaving away at work! Can you tell I’m a tad bitter haha Anyways, my mom came to my work to pick me up and we got  lunch at a cute little place called Beachwood BBQ. They have the most delicious foods and we ended up splitting a ginormous salad that had goat cheese, dried blueberries, butternut squash, pumpkin seeds, and a vanilla infused vinaigrette that was to die for!

We also got 3 side dishes to split as well..you can do this thing where you pick 3 of their sides and you get little mini versions of them! SO BOMB! We got the smoked asparagus, maple glazed carrots, and vanilla walnut yams and they were all delicioso!

I should have taken pics, but I didn’t! Boo, I need to get better at whippin’ out the cam!

Anywho, on to my recent eats and workouts…

Last night I was in charge of the troops (aka my little brother and sister), so I whipped up some of my homemade mac n’cheese!

Mac N’ Cheese Recipe:

  1. Boil water, then add noodles (i used 1/2 box of shell pasta)
  2. Once noodles are cooked (about 10-15 min.), drain and pour into a baking dish
  3. Next add 2 scoops sour cream, 2 large scoops cottage cheese, 1 cup parmesan cheese, 1.5 cups shredded cheddar cheese and stir everything up (these measurments are versatile, so just make sure you use enough of each ingredient to get all the pasta coated in the cheesy mixture)
  4. Finally, top with bread crumbs & more shredded cheese
  5. Pop in the oven and bake until everything is melty (about 15 min.)

Yum! This dish is good when you need to feed a lot of people quickly! Also, is very versatile…so other seasonings and maybe some veggies could be added to mix things up a little 🙂

On the side I roasted some veggies (precut mix from Trader Joes) that I topped with olive oil, salt, pepper, and paprika….and cut up a fresh pineapple to enjoy as well!

Such a kid friendly and delicious meal..plus plenty of leftovers for tonight!

This morning I did my now “usual” spin class and we did some hill work that seriously kicked my butt! I finished up with some light dumbbell work and am thinking of taking a nice easy walk this afternoon after work since it is SO nice out!

Breakfast was overnight oats..my classic mix with dried cherries, apple, strawberry, cinnamon, and honey on top!

I am trying to up my vegetable intake because all I currently eat is fruit, fruit, and more fruit! So trying to swap some snacks with veggies to get more servings in!

One thing I have really been thinking about lately is how sometimes I tend to look at the negative in things and how I really want to stop doing this! It gets so easy for me to think about how many things in my life have not gone as I planned, yet in the end I have to constantly remember that everything happens for a reason.

Sure I never thought I was going to get an eating disorder and isolate myself away, yet it happened and it made me realize how strong I really am! Every day I am constantly battling those negative voices, yet all it takes is one moment to center myself and realize how much I have in my life to be thankful for!

I have a wonderful family, supportive friends, I was able to get a college education at a top university, I have a fantastic job in the field I want to pursue, I laugh every single day, I am in good health despite how much I put my body through, I have a roof over my head and food to eat, and there is just so much good in my life that I often take fore granted. So, today and this weekend and hopefully in any tough situations I hope to remember how much I have to be thankful for and use that as guidance to push me through life!

Anyways, to other topics beginning with my breakfast this morning…week 2 friday breakfast

Sun butter & berry overnight oats. All I can say is I love this breakfast, but my challenge for next week is to switch things up a little!!

I also completed spin class this morning at the gym! My nutritionist recommended I try some different classes and activities so on a whim I ended up doing spin and totally was reminded of how much I love it! I used to do it all the time in college, but since moving home it had sort of phased out. However, I think now I am going to try and make the Friday morning class when I can because the instructor was awesome and it was nice to add a new workout into the rotation!!

Lunch today is not pictured, but was a roasted veggie pizza! I went out to lunch today and as soon as I read that this pizza was topped with tomatoes, spinach, mushrooms, zucchini, peppers, onions, and tons of other veggies I was hooked! It satisfied my pizza craving and was meat free (since Fridays in Lent I can’t eat meat) and left me happy, full, and ready for the weekend!

staying away from the scale & numbers…

bored 3 Oh hey everybody..just wanted to include a selfie so you can think of this smiling face saying good morning! haha

But really, this post is a little serious and is going to focus on my recent freak out. During my eating disorder I become obsessed with how much I weighed and what size I wore. Being my height and build throughout high school I had weighed roughly 130 pounds due to my high levels of activity ( I swam for both my school and a club team year round!) and had been a size 3-7 depending on where I was shopping and how active I was. Anyways, I never remember my weight being an issue and I pretty much ate whatever I wanted without really thinking about it. I know now I wasn’t eating all that healthy and at times I wasn’t completely happy with my body, but for the most part I was pretty content!

However, when I started losing weight I remember seeing the number on the scale plummet and since I had never been the girl who weighed in the 120s or below I was actually obsessed with keeping my weight very low because I felt that I was supposed to weigh in that range. However, obviously the numbers kept dropping and I was seriously undernourished, even dreaming about food because I was consuming so few calories. My hair was falling out, my teeth yellowing, my skin dry & dull, and no period for years. It was awful…yet every time I weighed myself i was happy when the number was lower than it had been the day before.

Since I have been in recovery I haven’t really weighed myself just because I know how much that number came to mean to me during my worst times. However, lately I had been feeling better and actually let myself look at the scale when my mom weighed me. I wasn’t even that freaked out after I saw it because I knew I was feeling healthier and happier, and that is what is most important to me now. Unfortunately I weighed myself this weekend for no reason and the number kind of freaked me out! It wasn’t like I had gained some crazy amount of weight, but for me it just seemed to be higher than what I had thought it was going to be. Monday I had kind of a bad eating day because I let the number get to my head, but then I was lying in bed thinking about things and I realized I can’t keep doing this to myself. My weight now is healthy and I am in no way fat or overweight at all! My hair is thicker, my skin glows, my teeth are whiter, and I have so much more energy than I did before! I can’t let that number get in the way of all the progress I have made and I am happy to say that I am not going to be weighing myself anytime soon! I am ready to love my body for what it is and what it does, not how much it weighs! I know that if I continue to live a healthy life and fill my body with nutrients and whole foods I will continue to improve my life and will be so much happier in the long run 🙂

Easy, simple, full of protein, & kept me full! What more can you ask for in a lunch! Also, recently I have been trying to focus on keeping things pretty basic/simple. So less dressings/seasonings/etc. have been my goal and this meal definitely met those qualifications!

Dinner last night was boiled shrimp, an asian kale salad (with almonds/ginger vinaigrette, chives/& crispy wonton pieces), & some steamed carrots w/ a honey drizzle….I didn’t snap a pick because we sat down to dinner as a family last night and no phones or cameras are allowed, but the meal was delicious and very filling!

I also stuck to my planned workout last night, and was super glad I came with a plan because I know I would not have pushed myself that hard if I hadn’t! Unfortunately the stair climbers were occupied the entire time I was at the gym, so I made 10 min. on the elliptical work and then did some serious stretching last night at home!

Hello people! I am exhausted and this final hour of work on Friday afternoons may be the death of me!!! It literally goes by so slowly every single week!! At least I got my workout in this morning so that I can go home, put on my sweats, and chillax before I decide what I am going to do tonight!

My workout this morning consisted of 30 min. on the elliptical…nothing too special, just increased the resistance every 3 min. and then I actually worked up the nerve to get some dumbbells and did some free weight exercises for about 15 minutes! I overslept so my workout wasn’t crazy long, but I felt good after and definitely mixed things up 🙂

Breakfast was…..drumroll pleaseeeee…OVERNIGHT OATS!! I know, you are probably thinking homegirl needs to get some new breakfast ideas, but the truth is that overnight oats is so versatile and keeps me full until it is time for my midmorning snack! So, today I did a peanut butter/blueberry variation that looked like this….

The day was crazy busy at work and when lunch rolled around I wasn’t quite sure what I was in the mood for. I had packed a lunch, but wasn’t really feelin’ it so I opted  to try the salad bar in the cafe downstairs and made this little concoction…

It has some tuna salad, raisins, sunflower seeds, garbanzo beans, carrots, zucchini, artichoke hearts, broccoli, and was topped with some olive oil and vinegar! I also had a serving of pretzels on the side and it ended up being a nice little lunch!

Like I said before, work was super busy, as I was working on a big project and the coworker I was helping bought some peanut butter fudge to thank me for my hard work!!! Let me say that stuff was absolutely what I needed to make it through this Friday afternoon and I also had some hot chocolate/cashews/& blueberries as another little snack to tide me over!

Anyways…it is now on to the weekend! I will check in soon..adios mis amigos!!

Why hello there! Can’t you tell that I am just so stoked to be at work today! haha at least it is Thursday, so that means the weekend is quickly approaching 🙂 yay!!

Anyways, yesterday afternoon I posted my treadmill workout that I was going to do at the gym…however I had some unforeseen problemos aka my knees felt like they were going to give out after approximately 35 minutes of hill work and so I ended up doing a light jog and then calling it quits so I could go stretch after 43 minutes! Not the workout I had intended, but I know that it is important to listen to my body and what it is telling me and last night it was telling me to take it easy!!! I actually did some really good stretching to loosen up and then added some planks and about 10 minutes of arm machines before heading home for dinner!

And dinner just happened to be my favorite food in the whole world…PANCAKES!!!

These pancakes are actually pretty healthy and easy to make..all I did was mash up 1 banana and then add 1 egg, a spalsh of vanilla extract, a handfull of mini chocolate chips, & a dash of cinnamon. Once I had my pancake mix ready to go I heated up a pan, sprayed it with some cooking spray and spooned out my mixture into 3 medium size pancakes. I let each side cook for about 5 minutes and then topped with some syrup/nutella/& fresh fruit! It was super yummy and quick to whip up!!

Then, this morning began with a 45 min. elliptical workout, which i will post later & some abs! Breakfast was a handful of granola, some grapes, a nonfat latte, and overnight oats…

I simply made my original overnight oat recipe and topped with dried cherries, salted almonds, & some raspberries…yumalicious!! Once again my overnight oats did not disappoint and my tummy is definitely full and satisfied this morning!

Why hello! Just thought this gem of a pic would brighten up your morning! This is my little sister and I messing around…as we typically do and though I am not sure why we decided to take this pic? It seriously makes me smile every time I see it!

Anyways, on to last night’s workout! So, I tried out making my own workout and seriously I freaking loved it! The treadmill workout got me doing about 4.2 miles in 50 minutes with lots of hills and some sprints thrown in and let me just say I never got bored and I was sweating up a storm by the time I finished…

Then,. I did my ab routine and that seriously was hardcore too!! It really pushed me to do more than I think I would have if I hadn’t written it out ahead of time…so I think I am going to try and make a plan for this evening again because I seriously loved having a plan that I had created and felt so accomplished when i was able to do everything I had written up!

But, let me also just say that yesterday afternoon when i left work I seriously was NOT feelin’ the gym! I was tired and had a slight headache and I seriously debated going home, plopping on my sweats, and watching reruns of 30 Rock while eating Ben & Jerry’s Ice Cream!! However, I made myself start my workout and when I heard some old school Shania Twain come on my ipod I got some serious motivation!!! Shania Twain powered me through this treadmill workout and I was rockin’ out to her “Come On Over” CD like it was 1998! It was just what I needed and I left the gym feeling happier and more energized than I would have ever imagined!!

Ok, well I am off to finish my breakfast (Nutella/Coconut/Blackberry Overnight Oats…because why would i ever want to switch up my breakfast for anything other than overnight oats?) and I will check in later this afternoon, hopefully with a new workout to try tonight!!!

oh hey it’s me…just wishing the work day was over!!! nothing says i’m cool like a little selfie action at your desk! haha i thought i might as well post today’s snack which was some greek yogurt, pomegranate seeds, dried cherries, and honey mixed together and enjoyed with some hot chocolate…yummmy in my tummy and hopefully gives me fuel for my workout this evening!

Alrighty…lets get going with my breakfast….

My absolutely favorite and most filling breakfast to bring to work is overnight oats!! They are seriously so versatile and keep me full for a good 3+ hours! The texture can be kind of unique, so if you aren’t a yogurt/oatmeal fan then I probably wouldn’t try overnight oats since essentially it’s just a combo of both!! BUT if you are like me and love yogurt…then try this sucker and be prepared to fall in LOVE!!!

Ingredients:

1 c. rolled oats, 1 6 oz. container Brown Cow Vanilla Cream Top Yogurt, 1/4 c. Vanilla Soy Milk, 1 tbsp. chia seeds, 2 tbsp. peanut butter, 1 tbsp. strawberry jelly, 6 diced strawberries

Mix everything up, let sit overnight, then in the morning add a dash more milk and enjoy!!!

And now on to lunch today….

Lunch today was 1/2 a can of white albacore tuna (drained and mixed with miracle whip, relish, celery, and carrots) on an everything bagel thin and served along side a chicken caesar salad (not pictured since I inhaled it while browsing instagram while on my lunch break!).

It was super nice outside today so I enjoyed a little 30 Rock via the netflix app on my phone and soaked up some rays before heading in to finish up the final stretch at work!!! While planning my workout for this evening, I happened to stumble upon something called Spring Bootie Buster Challenge (SBBC)….essentially this program gives you workout and diet tips which allow you to get points for eating healthy and staying active! There are prizes you can win and group chats for support and it’s all for only 22 dollars. I have never done any plan or group like this, so I am excited to give it a try! I will keep all ya’ll posted once it gets started 😉

A treadmill workout for those who don’t run!

So, let me start by saying that this workout is from last night at the gym, and it incorporates some jogging and intervals to create a workout ideal for those who are just starting to run or for someone wanting to push themselves hard, but not to their maximum energy expenditure.

I had been working on my running for about 5 months and was at about 5 and 1/2 miles in 55 minutes when I unfortunately hurt my leg and was basically doing elliptical workouts and strength training for about 2 months while I let my leg heal. I was initially kind of bummed out about this because I knew it meant my running endurance would suffer, but it was actually a great reminder to start switching up my workouts instead of focusing solely on just running! For me this was a huge wake-up call because I was so focused on running for as fast as I could and as long as I could, that I was actually overworking myself and going back to some of my disordered thinking (aka the need to burn calories and workout as often as possible instead of working out to feel good and gain strength/energy). I now have incorporated more time for strength training and other cardio machines so that my weekly workouts are challenging and fun and mix things up, AND I can also see my body changing in a more positive way where I now have more toned muscles! So, all in all my injury was a positive because it helped me to slow down and remember that disordered thinking can sneak back up on me if I’m not careful!

And, on that note I bring you my 48 minute (no, not 45 or 50) treadmill workout!!!
