vacation recap..plus how to stay healthy when on vacation!

Easter weekend meant my family was road tripping it up the California coast! Our destination was a little above Santa Barbara, we planned on looking at some colleges for my seester and then visiting my aunt/uncle/& cousins on Easter Sunday!

Friday morning started out with an early morning spin sesh before we hit the road!

It felt good to get a nice workout in and then my family ended up hitting the road at about 11. The views up were soooo pretty and traffic wasn’t too shabby either!

Let me preface our vacay by telling you that we ended up eating lots of McDonald’s this weekend! The trip up we stopped to use the bathroom, but then everyone ended up eating! Most of the fam got fish sandwiches, but i opted for a yogurt parfait and some french fries…the same meal I had on our trip home on Monday! haha My dad and brother also stopped again on the way home to get shakes…so we had a total of 3 McDonalds stops in 4 days..keepin’ it classy folks!

Anyways, on Saturday we headed to Morro Bay, which is about 15 minutes north of San Luis Obispo…it was a gorgeous days and the views were amazing!

While in Morro Bay we decided to get lunch at a nice restaurant called Dorns..the views from our booth were awesome and I enjoyed a delicious bowl of corn chowder and some warm sourdough bread! Here is a pic of the aftermath of our meal…

Then, we continued to drive up the coast towards San Simeon and turned around a little past Heart Castle…nice long drives our my favorite! So relaxing!!!

All the scenery was lush and green because of spring..and we were blown away by how nice the weather was as well!

We also looked at the campus of Cal Poly SLO and my siblings and I managed to take some super serious pics while waiting for mom and dad to pay for parking…

Aren’t we just the cutest things! haha Anyways, my sister is a senior so we wanted her to look at both Cal Poly SLO and UC Santa Barbara, because she got into both schools and is trying to make a decision! I got the feeling she liked SLO better because it is a smaller school and she doesn’t want to be overwhelmed at a huge college, but we will see!

Anyways, next day was Sunday and my family went to Easter mass at the San Luis Obispo Mission, which was so nice! Then, we had a nice Easter brunch at a restaurant that sits over the creek right next to the Mission!

I got a “taco salad”, which has a grilled white fish served over white rice and fresh kimchi…it was so fresh and delicious! The perfect meal for sure…lots of flavor and one of the best things I have eaten, hands down!

Then, we walked around downtown SLO and got ourselves some ice cream for dessert..I got cookie dough and it was delicious!!

That night we headed to my aunt and uncle’s house for a nice Easter dinner.

We had ham, fruit salad, regular salad, cheese/crackers, and the best cheesy potato casserole I have ever eaten in my life!!!!

Dessert was strawberry shortcake, which really hit the spot as well!

We spent the night catching up with family and my parents told some of the funniest stories of when they were younger! Such a great family Easter for sure!

The next day we were heading home, so we packed up and headed to Santa Barbara to take a look at that campus!

Anyways, we finally made it home Monday evening and I was exhausted so i watched some hockey, hit the grocery store, had dinner, and hit the sack!

Family vacations are seriously the best!!! And this one was no exception!

While on vacation I made use of the hotel gym 2 mornings (Saturday & Monday..doing only 40 min. of cardio, but still worth it!) I usually try to get in a quick workout early in the morning when we are vacation, that way I don’t feel as bad when I indulge in the treats that usually accompany being on vacation!

Also, for breakfast we would usually hit up the free breakfast at the hotel and though I was tempted to indulge in things like french toast, pancakes, muffins, bacon, and hash browns..I tried to stick to oatmeal w/ pb, toast & eggs, yogurt w/granola, and always a side of fruit & and a banana! My trick for hotel breakfasts is to eat something that will fill me up, but not weigh me down! Oatmeal is always a great option and I also love that eggs are already cooked and easy to grab as well! Try to eat something substantial, but don’t go overboard just because it is buffet style!

Soyaki marinated salmon w/ green beans and zucchini (parents had the bbq on already, so I threw on my own salmon filet and the zucchini!)

Workout yesterday was an hour long spin class and some stretching after!

Workout today was 50 minutes of spin (instructor didn’t show up, so I did my own workout and managed to sweat a lot!!!) followed by 15 minutes of abs on the stability ball…

Breakfast isn’t pictured, but was cottage cheese & fruit parfait, banana, Starbucks misto, and some grapes….

I will be back later with lunch and my fun plans for this evening! Keep it classy my friends 🙂
