breakfast foods for every meal!!!

hi everyone….so other than the fact that i am currently in the midst of a froyo obsession (lets not talk about how i got it twice last night…oops!), i am also on a breakfast food kick! apparently my body is telling me to eat toast and oatmeal and yogurt and fruit and peanut butter and bananas for every stinkin’ meal! haha i seriously have been living off of these foods and oh ya also craving red meat like a mother too! haha cravings are so weird!!!

anyways, for lunch yesterday i had an ezequial sprouted whole grain english muffin topped with loads on sunbutter and a sliced banana…

Yum, so good and filling!!!

Then, last night i headed over to a sports bar with my bessttieeee and we watched all the hockey playoff games while enjoying dinna! i got a santa fe salad, which was a bed of romaine topped with avo, carne asada, bell peppers, corn, tomato, and a yummy cilantro vinaigrette dressing! It was amazing and super cheap for how much you got!!

Oh and my froyo sessions happened 1…after i got home from work and before i went to dinner and then 2….when i got home from dinner and before i went to bed. lets just say i gave into my craving and have to have more self restraint from now on!!!

On to today…got up early to go to the gym, then decided to sleep in and go in the afternoon! haha maybe all that frozen yogurt made me lethargic or something…but ya spin is on the agenda tonight!!

For breakfast today i made myself a berry smoothie (yogurt, almondmilk, spinach, protein powder, & frozen berries), then topped it with homemade granola..so good!

Lunch was eaten en route to Nordstrom Rack on my lunch break, so i did not snap a pic..but it was overnight berry oats…haha basically just rolled oats, greek yogurt, almond milk, chia seeds, sunbutter, frozen berries/cherries, and topped with another dollop of greek yogurt this morning!

haha soooo, hopefully i won’t cave to breakfast foods or froyo for dinner tonight! I am thinking of maybe doing salmon and sweet potato/broccoli combo..we shall see!

Time to recap my weekend and the start of my week!

Well, we can start by saying that I have in fact had frozen yogurt 4 times in the past week! I am on this new boat where I basically want it every night and then I have to limit myself because I will go broke if I keep it up at the rate I am going! But, anyways..my like only picture this weakened was one of froyooo!!!!

I believe this mix had peanut butter, banana, and vanilla froyo..mixed with strawberries, cookie dough bites, cheesecake bites, and my new fave topping….fruity pebbles!! Seriously guys…they even go good on the more chocolaty flavors!

Um, basically this weekend I spent Friday night with some yogurtland and a movie w/ friends.

Then Saturday I hit the gym for 25 minutes of spin and some ab work. Then, I volunteered at my little brother’s school fair because my parents couldn’t go to the shift they signed up for…aren’t I such a good daughter?! I sold ride tickets and the 3 hours actually ended up going by fairly quickly!

Then, Saturday afternoon I got some lunch with the mom and seesters…then I went on a late afternoon run and did about 4 miles. However, it was late in the afternoon and HOT outside and I was still full from lunch and didn’t do a scenic route…so run kinda sucked! But, I did finish it up at the baseball field where my little bro had a game and so I got to watch him play for about an hour, which was nice! I love sitting in the park and watching baseball games, so relaxing! Especially after such a bad run!

Saturday night I had plans to go to dinner and movie, but my friend canceled last minute…so I threw on my sweats, got me some froyo and started watching Downtown Abbey! I am officially hooked on the show…and it is only getting better with each episode!

Sunday morning I met up with a friend for breakfast where I got the best French Toast eva!!!! I talked about it before, but it is basically a baguette filled w/ mascarpone cheese and topped with whipped cream and berries!! SOOOO good!

After breakfast, I hit up Target with the parentals…then got lunch with mom and sister again! Finally, I napped and then drove up to LA to meet up with some college friends who were doing a little healthy living party. They did a presentation on this awesome vitamin called Juice Plus, which basically is the pressed nutrients of tons of fruits and veggies all in one small capsule! Super cool and I am definitely going to be giving this a whirl!

Alright…now on to Monday! My day started with this…

Chicken/Apple Sausage, Brussel Sprouts, Sweet Taters, Carrots, Celery, Mushroom, Onion, topped w/ hummus…yummmalicious! and full of veggies!

My produce was about to go bad…so I simply sautéed a ton of veggies up, then added the sausage and hummus for a yummy fridge cleaning dinna!

I went to spin class last night…but I was kind of feeling weird and had some stomach cramps, so I cut class a little early and stretched out before heading home! Sometimes you just have to listen to your body and my body was telling me to take a chill pill last night!

This morning I woke up early and hit the gym..I got in 5 miles in 55 minutes incorporating some incline walking and building speed as workout went on!

I also did about 15 minutes of abs and am thinking of trying to do a little arm workout later..maybe try and come up with a 10 minute mini workout…but we will see!

Yum! And so far it is doing a good job of keeping me full an satisfied!

i have the BEST MOM ever!

Do you ever have those days where you realized how truly blessed you are?! Today was definitely one of those days for me because I shared some quality time with my madre!

My mom has always been a superb mom…from the time I was little I have always loved spending time with her and our one-on-one time (though rare) is seriously always the best! We have a pretty open relationship, especially after going through all my issues these past few years and so our convos are generally open, honest, and heartfelt.

We also love to joke around, so we always are laughing when we are together! And today was no exception!

Momma had the week off because she is a teacher and the school is on spring break, hence my entire family got to sleep in, go on bike rides, eat yummy food, watch crap tv, lay out, and RELAX while I was stuck slaving away at work! Can you tell I’m a tad bitter haha Anyways, my mom came to my work to pick me up and we got  lunch at a cute little place called Beachwood BBQ. They have the most delicious foods and we ended up splitting a ginormous salad that had goat cheese, dried blueberries, butternut squash, pumpkin seeds, and a vanilla infused vinaigrette that was to die for!

We also got 3 side dishes to split as well..you can do this thing where you pick 3 of their sides and you get little mini versions of them! SO BOMB! We got the smoked asparagus, maple glazed carrots, and vanilla walnut yams and they were all delicioso!

I should have taken pics, but I didn’t! Boo, I need to get better at whippin’ out the cam!

Anywho, on to my recent eats and workouts…

Last night I was in charge of the troops (aka my little brother and sister), so I whipped up some of my homemade mac n’cheese!

Mac N’ Cheese Recipe:

  1. Boil water, then add noodles (i used 1/2 box of shell pasta)
  2. Once noodles are cooked (about 10-15 min.), drain and pour into a baking dish
  3. Next add 2 scoops sour cream, 2 large scoops cottage cheese, 1 cup parmesan cheese, 1.5 cups shredded cheddar cheese and stir everything up (these measurments are versatile, so just make sure you use enough of each ingredient to get all the pasta coated in the cheesy mixture)
  4. Finally, top with bread crumbs & more shredded cheese
  5. Pop in the oven and bake until everything is melty (about 15 min.)

Yum! This dish is good when you need to feed a lot of people quickly! Also, is very versatile…so other seasonings and maybe some veggies could be added to mix things up a little 🙂

On the side I roasted some veggies (precut mix from Trader Joes) that I topped with olive oil, salt, pepper, and paprika….and cut up a fresh pineapple to enjoy as well!

Such a kid friendly and delicious meal..plus plenty of leftovers for tonight!

This morning I did my now “usual” spin class and we did some hill work that seriously kicked my butt! I finished up with some light dumbbell work and am thinking of taking a nice easy walk this afternoon after work since it is SO nice out!

how i eat (primarily) unprocessed foods!

Hey everyone! Before I get into the meat of this post, let me tell you a bit about my evening yesterday and then my workout and breakfast today!

So, last night my family and I went to a HOCKEY GAME! Seriously, if you have never been to a hockey game, you need to go!!! They are so lively and action packed..never a dull moment! I tend to get bored when watching football and baseball, but with hockey the action literally never stops!!!

The game was awesome, Anaheim Ducks played the Dallas Stars and our ducks won 5-2!

Anyways, dinner was not the healthiest because it was game food haha but it sure was delicious! I had a hotdog w/ relish, mustard, and onions. Also, had a handful of peanuts, lots & lots of delicious popcorn (think movie theater style), a few Sour Patch Kids, and some hot chocolate…this is kind of ironic considering today I want to talk about how I cut out most unprocessed foods from my diet, but hey every once in a while you gotta give in and indulge a little 😉

Anyways, I was exhausted by the time we got home last night and fell asleep almost as soon as my head hit the pillow!! I thought about snoozing my alarm when it went off at 4:45 this morning, but decided to bite the bullet and get up for my morning workout! I didn’t know how in the mood I would be to run, but I decided to give it a go and actually had tons of energy! The run went by quickly and though when i post my workout it is going to look a tad confusing, in reality it is basically 5 min. incline walk followed by 10 minutes of 1 min. jog/1 min. sprint switch offs (repeat that 2x), then 5 min. recovery walk, 14 min. of increasing incline jogging, and 1 min. cool down..easy peasy!

So, ya like I said it looks confusing when written out, but it was an awesome workout and let me get in a lot of mileage in not too long of time!

I am trying to up my mileage in hopes of doing a 10K at some point this summer, so I think I am going to try an outdoor run by the ocean this weekend and hopefully get in over 5 miles!

Ok, next on the list is breakfast today..started with a banana and 1/2 a granola bar when I got home from the gym…then once at work I had…oats in a jar!!

Don’t you love how I captured my meal at different stages of being eaten! haha Anyways,  I did like 1/4 cup rolled oats, dash of vanilla coconut milk, 2 scoops plain greek yogurt, 1 spoonful cocoa, and then topped it this morning with more coconut milk, strawberries/blackberries/blueberries, & a scoop more peanut butter..yum!

Ok…now on to my topic of getting rid of processed foods in your diet. I actually happened to end up doing this by mistake and mainly just by keeping my diet made up mostly of fruits & veggies. Most of my meals center around some concoction of fruits or vegetables and then in the morning I add yogurt/oatmeal/whole grain toast/or nut butter to round out the meal.

Lunch and dinner tend to be more veggie based and usually are a salad or sauteed veggies topped with some type of protein. For lunch I like to add various mixtures of nuts/dried fruit/fresh fruit/chopped veggies/chicken/turkey/tuna/salmon/& a vinegar or oil based dressing.

Dinner tend to be a ton of veggies sauteed in coconut oil and then topped with cheese/& or meat..when i am eating rice or pasta I usually try to get a whole grain version (think whole grain pasta, quinoa, brown rice, etc.) and not too much sauce & salt added on top.

For me, once I started stalking up on fruits and veggies my meals came to center on those items and I stopped needing crackers/chips/croutons/lots of dressing/frozen meals/etc.

I also stick to plain greek yogurt/organic milk/rolled oats (not instant) and most of my breakfast options are pretty basic and fresh.

Once I started making my meals with less processed foods I found that my cravings for coffee and soda also decreased as well!

My diet now feels more rounded out and I am happy to say that the things I do eat fill me up and keep me focused/energized/& strong!

Of course like I said earlier I do indulge every once in a while in snack type foods, but even then I have found that the less I have them the better they taste when I do have them here and there!

things i am loving right now!

Good morning slash afternoon everybody! First let me start off with a quick recap of my workout and dinner last night, which was super delish!

Workout went well! I pushed my self a little harder on my planned run where instead of running for 4 minute intervals I made those 6 minute intevals and then broke up the next 4 min. incline walk into 2 min. hard incline and then 2 min. recovery incline!

My final run breakdown looked like this…

When I got home I packed my breakfast/lunch/snacks for today and then got to work on an easy dinner!

Since I am trying to use up groceries/leftovers before they go bad I recycled my quinoa caprese meal idea, but added in a chicken sausage for some added protein & staying power! The added meat component gave the dish a lot more sustenance and I thoroughly enjoyed it…

Again all you do for this dish is take about 1/2 c. cooked quinoa (mine was leftover from din on Sunday), cut up a handful of grape tomatoes, some basil, & mozzarella cheese, then I cooked the sausage on the stovetop in 1 tbsp. coconut oil and added everything together in a bowl!

Super quick, easy, fresh, and delicious meal!

For “dessert” I had an orange..I am not usually one for having fruit for dessert, but we didn’t have anything sweet in our house really..so an orange had to make do 😦

Anyways, after dinner my family watched the Duck’s hockey game against the San Jose Sharks, we are big Ducks fans haha and well they got their butts kicked to the Sharks and it was a sad night for all in the Kennedy clan 😦

PS my fam is super big on hockey so we watch it all the time! I am pretty much up on all the stats and it is one of the only professional sports I watch on the reg! It’s just so good…fast paced….fights…cute hockey players…what’s not to like!

Next up…breakfast this morning! I finished my jar of cookie butter yesterday, and that only meant one things…overnight oats in a jar!!!

I added 1/2 c. rolled oats, 1 6 oz. container of Trader Joe’s Honey Greek Yogurt, 1/2 tsp. chia seeds, dash of vanilla almond milk, cinnamon, and apple slices…in the morning I mixed it up and added a bit more milk/a dash of sunbutter and was thoroughly happy with my little concoction and the return of this breakfast beauty!

Ok, now on to things that are making me happy right now…let’s do it list style because that makes thing super easy to read 🙂

  1. Daylight Savings Time- I mean nothing is better than getting off work, going to the gym, and still having a tad bit of daylight left once my whole day is over! Seriously..makes me so happy!
  2. Spring Weather- There is something about Spring time that is just so wonderful! Right now it is starting to warm up, baseball season has begun, the smell of fresh grass and blooming flowers delights your nostrils, afternoon walks get more appealing by the day…it’s the down right best time of year!
  3. Easter!!!- I LOVE EASTER! There is something about wearing a nice sundress, going to mass with my family, eating a yummy brunch, and enjoying season candy like Peeps and Jelly Beans that is absolutely wonderful!
  4. 30 Rock- My obsession with this show is getting a little out of hand! I didn’t watch it really when it was on air, but recently discovered it on netflix and decided to give it a whirl! Wow is all I can say…it’s so freaking hilarious! It’s kind of a very particular type of humor, but it makes me crack up every time I watch it..gotta love Tina Fey!
  5. Interval Workouts- My latest obsession has been doing intervals on the treadmill…they have been the best way for me to increase my running mileage and I seriously sweat like no other when I finish them! Also, adding an inclined walk in my intervals seriously has given me great endurance…on my hike this weekend I barely struggled at all on all the major hill climbs! I was super proud of myself 🙂
  6. Jillian Michaels 6 Week 6Pack Abs- I am going to really push myself to do it for 6 weeks and see if I notice a difference! It kicked my butt Sunday, so hopefully with consistency and repetition I will see some results…because let me be honest, I’d love to have a more toned stomach once summer time bathing suit season roles around!
  7. Last, but not least…my new camelback waterbottle! It seriously keeps me sippin’ water ALL DAY LONG! Without it I never wanted to drink water, but now I refill it multiple times a day and keep it with me pretty much at all times! Yay for getting my h20 in on the reg…I gotta say it makes me pee a lot, but I have noticed clearer skin and less frequent headaches..gotta be good signs right 😉

squats will be the death of me.

hey everyone! so let me first start with last night’s workout…I did my 40 min. workout that I had planned. Legs were a tad sore, so my incline was sometimes less than I had posted and the last sprints I lowered to 7.0, instead of 7.5 speed. My grand total looked like this…

After my time on the treadmill it was time to tackle the squats I had been putting off since Monday!!! I happened to run into my sister while I was there and she said she would do the squats with me because I was feeling kinda embarassed to be doing them on the mats alone (I hate people staring at me and so I think this is the main reason I put off squats for so long!). Anyways, with my handy dandy squat partner in toe I ended up doing all of my planned squats (ended up being like 120 squats in all!!!) and they freaking killed!!! Like I could barely walk after! That shiz was intense!! haha I am seriously blown away and my legs today feel crazy sore! But I will take that as a good thing and hopefully with time squats won’t be as killer!!

Last night for dinner I made some fresh green beans, topped them with marinara sauce, and also boiled some goat cheese & sundried tomato ravioli..but being that I have a love/hate relationship with goat cheese..the ravioli last night ended up being a bust and I instead ate the green beans and like 5 raviolis..it was ok and I guess part of life is trying new things, at least now I know not to buy that type of ravioli again? haha bright side maybe?

Next up is my eats so far this morning..let me start with this gem

I usually take my little brother to school, but today my mom did and so I was able to make a stop at the drive-thru Starbucks, which was awesome! I didn’t even have to step out of the car to enjoy a wonderfully warm latte! #spoiledmuch?

Now on to breakfast…as you all know by now I am addicted to overnight oats and was trying to branch out this week with new breakfast options. I had done well so far, and had even made a yogurt parfait last night to have as breakfast today, but then I went back and made it into overnight oats like 20 minutes later!! The addition of rolled oats, chia seeds, and sunbutter into my yogurt definitely made for one happy camper this morning!!

Heyyyy urybody…so before I get to this wonderful breakfast I would like to start today’s post with a little discussion of overworking yourself at the gym…the inspiration coming from my time at the gym last night and this morning!

So last night I didn’t end up getting to the gym until like 5:40, which is late for me because I tend to normally get there around 5:25ish. Anyways, I was short on time and also had to leave by 6:30 because I was meeting friends at 7:30 and had to shower and pack my meals for today in that 1 hour time period! Anyways, after creating my workout yesterday afternoon I quickly realized I was going to have to switch things up and so I decided to shorten my run and save arms for this morning. Good thing I made this plan because let me tell you my legs were a burnin’ during my run!! Like seriously I don’t know if I am still sore from when I injured my leg back in November or if maybe my inclines have gotten the best of me, but the weird thing is I could probably run more but  my legs started to feel like they were going to fall off after about 25 minutes last night! Anyways, I ended up doing 43 min. of my treadmill workout and then I completed my ab sesh and was on my way by about 6:40! Not too shabby!

However, I would like to write a little about overworking yourself because I feel like it is fairly common to get in a habit of working out a certain amount of time or days or do the same routine and get stuck within certain boundaries. Sometimes I go to the gym with a plan and my body tells me that I will not be completing that plan! Sure it is one thing to push yourself and to try and gradually increase your weights or intervals or speed, but sometimes you also have to realize that going hard isn’t everything!

Some weeks are going to be busier than others and your body will most definitely react to your workouts in varying ways depending on how stressed you are/how much sleep you’ve gotten/what foods you have been eating/if you’re on your period…etc. so make sure to ease up if that’s what it is telling you! I know that sometimes an extra rest day one week can make me accomplish so much  more the following week because my body simply needed a chance to recover! Try to listen to these cues and make sure to realize that one day off or one day of a different routine could most definitely be a good thing 🙂

Anyways, on to breakfast for today which was….

dash of vanilla almond milk

sprinkle of coconut (yes I know dash and sprinkle aren’t acurate modes of measurement, but I just kind of put in an amount I thought was right and have no idea exactly how much it was..so ya’ll will just have to make do with my super vague measurements haha)

morning I topped oats with 1/2 banana, 3 strawberries, and a splash more almond milk..yummy!!! made me feel like it was already summer time..plus the weather has been so nice here in so cal that between this breakfast and the warm sun rays i feel like i am on a tropical vacation!

Yesterday’s breakfast is shown above and was my original overnight oats mixed with a scopp of sunbutter and then added apples/cinnamon/& an extra scoop of sunbutter on top!

This morning was original overnight oats again, mixed with a scoop of sunbutter, and topped with raspberries/blueberries/& honey roasted peanuts…can you say salty, sweet goodness?!

The funny thing about overnight oats is that I always think I am going to mix up my breakfast options, but then I get home every night and when I go to pack my breakfast for the following day the only thing I want is overnight oats!! They are just such a power house of nutrients and keep me full for quite a long time!

So last night for dinner I had a bowl with quinoa/asparagus/& chicken, topped with a dash of balsamic vinegar! It was super fast and easy to prepare because the chicken was precooked, so all I had to do was sauté it in a pan with the asparagus and add it on top of my quinoa, which was also precooked and simply zapped in the microwave to warm it up! Then, like every girl last night I tuned in for the season finale of The Bachelor!!!

I feel like Sean really got a quality group of girls this season, so I ended up really liking his finally two girls and was happy to see him and Catherine still happy together after taping!

Sean seemed like the total package with good morals, a good family, and obvi a super hot bod!!! Seems like Catherine got a quality man and though I am skeptical of finding love on The Bachelor (I always hate when in the final episode the bachelor/bachelorette talks about how they have no idea who they are going to pick…I mean like really though, you have to have some inclination or else I don’t think you love either of them!), but anyways I think the two of them seem genuinely in love!

Alright, I am going to do a workout post in a bit..gotta do some work though now haha talk to ya’ll lata!

“Me sleepy”..my thoughts every Friday afternoon…

Hello people! I am exhausted and this final hour of work on Friday afternoons may be the death of me!!! It literally goes by so slowly every single week!! At least I got my workout in this morning so that I can go home, put on my sweats, and chillax before I decide what I am going to do tonight!

My workout this morning consisted of 30 min. on the elliptical…nothing too special, just increased the resistance every 3 min. and then I actually worked up the nerve to get some dumbbells and did some free weight exercises for about 15 minutes! I overslept so my workout wasn’t crazy long, but I felt good after and definitely mixed things up 🙂

Breakfast was…..drumroll pleaseeeee…OVERNIGHT OATS!! I know, you are probably thinking homegirl needs to get some new breakfast ideas, but the truth is that overnight oats is so versatile and keeps me full until it is time for my midmorning snack! So, today I did a peanut butter/blueberry variation that looked like this….

seriously guys this stuff is my jam!!!

The day was crazy busy at work and when lunch rolled around I wasn’t quite sure what I was in the mood for. I had packed a lunch, but wasn’t really feelin’ it so I opted  to try the salad bar in the cafe downstairs and made this little concoction…

It has some tuna salad, raisins, sunflower seeds, garbanzo beans, carrots, zucchini, artichoke hearts, broccoli, and was topped with some olive oil and vinegar! I also had a serving of pretzels on the side and it ended up being a nice little lunch!

Like I said before, work was super busy, as I was working on a big project and the coworker I was helping bought some peanut butter fudge to thank me for my hard work!!! Let me say that stuff was absolutely what I needed to make it through this Friday afternoon and I also had some hot chocolate/cashews/& blueberries as another little snack to tide me over!

early 2000’s music= the best!!

So, my best friend is a girl who I have literally known since I was 5 years old!!! We went from kinder to 8th grade together and then separate high schools and colleges, but we always managed to stay in touch! Then, when we moved home from college we started hanging out all the time and our friendship is so solid because we have literally seen each other grow up aka know all of each other’s best and worst qualities!! Anywhoooo, our other friend who we also have known since kinder is busier because she is still in school and works nights (the time we both have off) so we don’t see her as much, but when the 3 of us get together it is always SO much fun! It seriously is like we are sisters and we usually end up reminiscing and laughing for hours!!

So last night the 3 of us ended up doing a Yogurtland run and then sat in the car just to talk and catch up while we ate! I was driving and being the weirdo that I am, I had recently made a playlist comprised entirely of hits from the early 2000s. I’m talkin’ Petey Pablo, Kevin Lyttle, Ying Yang Twins, Chinggy….oh ya I pulled out the good stufff!!!! And I also titled the playlist “New Shiz,” which I think just adds to the epicness of the whole thing. Anyways, I turned on Freak-A-Leek and it was like the 3 of us were transported back to 7th grade! It was hilarious because we still knew all the lyrics to all these songs and died laughing about how we would stay up all night watching MTV Hits back in tha day!! Such a good night/moment and made me so happy to know I have friends who I have literally known my entire life!!! Who woulda thought a playlist with a SUPER corny name could bring back such good memories 🙂

Anyways, on to breakfast this super sunny Friday morning…

Alright I was out of rolled oats last night and knew that I wanted something similar for breakfast, so I did a version basically with more chia seeds and less oats….I was a little skeptical but this morning they tasted delicious and were a great offshoot to the traditional overnight oats!

Chocolate/Peanut Butter/Nutella Chia Seed Pudding

Ingredients:

1/2 c. chia seeds

1 6 oz. container Brown Cow Cream Top Vanilla Yogurt

1/4 cup Vanilla Soy Milk

1 tbsp. cocoa powder (I used Nestle)

1 scoop Nutella

1 scoop Skippy Creamy PB

Mix up, let sit overnight, in morning add a dash more milk and top with bananas, blueberries…or whatever else you have or are feeling in the mood for!!!
